Potatoes are a big deal. They’re the third most important food crop behind wheat and rice.
Potatoes can be grown just about everywhere. They’re inexpensive and nutritious, and they’re being rediscovered around the world as prices for other foods rise.
Of course, there is a down side to feeding the world on potatoes. What if they develop a virus or blight? Some of my ancestors practiced a strategy for survival when they fled Ireland to escape potato blight and famine in the 1840’s.
That doesn’t stop anyone from eating potatoes today, does it? In fact, this points out a very good reason why you should raise some potatoes in your own garden. You’ll have your own good supply.
Remember, think survival, and have fun growing and eating a food with such a distinguished place in the world.
